Wedding Dance

I just got married on the weekend - woo hoo! Once the party got started and the music started, I forgot to sit down. I danced the whole time. It made me think how we should all have a party more often, dance, and forget about all the little things that get in the way.

Easy Tasty Recipe

A few weeks ago I went to dinner at a friend's house and she served the most delicious main course. It was baked fish with tomatoes and zucchini. There may have been onions too. It was great, and I mean G-R-E-A-T so I gave it a go at home. Here's what I did:

  1. Preheat oven so it's ready by the time you are.
  2. Place fish in a glass baking dish - my friend used halibut filets but I used salmon. Either choice is a good one (or another mild fish).
  3. Cover fish with slices of zucchini. Sliced mushrooms would work as would broccoli, cauliflower, etc.
  4. Top with fresh sliced tomatoes (or diced canned tomatoes), fresh or dried basil (as you have it) and a bit of pepper.
  5. Cover and bake until fish is done.
It probably took me 25 minutes from start to finish. It was fast and a hit!

It goes well with a salad or whole grain rice.

Ever since I started working on Happily Ever Active, The Active Living Calendar, people frequently asked me how I came up with the idea.

A couple of years ago, I had to go to the far north for a month for work and wanted a way to continue exercising without a gym because I knew there was no gym where I was going. Before I left, I scoured magazines and the internet for simple stuff that I could do while I was away that didn't involve a treadmill or serious barbells. But, I couldn't find a thing.

That's when I realized that there is not a lot out there for the 'common man' or the 'common woman'. There are a lot of exercise magazines and training resources, but you usually need some serious equipment or abs do do it! There is not actually very much for the busy mom (or dad) on the go who like to stay healthy but who can't necessarily want to become a gym-maniac.

The idea for the calendar came to me after that. Happily Ever Active is designed to make sure that it has ideas that we all can use without spending oodles of cash or having to buy loads of expensive equipment that end up collecting dust. Sure, it would be great to be toned all over but I think it's more important to be well. It's my hope that the Happily Ever Active calendar will help people do just that.
